The mix of spirits from agaves cooked together, under the same temperature and time. Distilled separately, each agave brings their own character to the mix.
Ensambles are made to the preference and taste of each maestro mezcalero. Each one of these mixes have a very unique and characteristic profile. Here the differences are even more pronounced from one batch to the next.
As we work with a growing number of maestros, their production means can vary. Some prefer Artisanal while others give preference to Ancestral methods. And this significantly influences the taste of their spirits.
